Every great hotel chef started somewhere, and for most of them that place was the commis station. A commis chef is the entry and junior level of a professional kitchen. It is where you learn the basics properly, build speed and earn the trust of senior chefs.

If you want to build a career in hotel kitchens in India or abroad, this guide explains what a commis chef does, how Commis I, II and III differ, which skills matter, and how to find commis chef jobs free on Hospitality Vacancy.

What does a commis chef do?

A commis chef works under a Chef de Partie (CDP), who runs one section of the kitchen, such as the Indian, continental, tandoor, pastry or cold kitchen. Typical daily duties include:

  • Preparing ingredients: washing, peeling, cutting and marinating

  • Doing the mise en place (getting everything ready before service)

  • Cooking simple dishes and helping with bigger ones during service

  • Following recipes and portion standards exactly

  • Labelling, storing and rotating food correctly

  • Keeping the station clean and following food safety and hygiene rules

  • Receiving and checking stock with the senior chef

Food safety training is valued in every kitchen, and you can learn more from the FoSTaC food safety training portal. The work is physical and fast, but it is also where you learn discipline, which is what senior chefs value most.

For general skill courses, see the National Career Service portal.

Commis I, Commis II and Commis III: what is the difference?

Hotels in India usually divide the commis level into three steps:

  • Commis III is the starting level. Freshers and trainees often join here and mostly do preparation, cleaning and basic cooking. See Commis III jobs.

  • Commis II has some experience and handles more cooking during service with less supervision.

  • Commis I is the most senior commis. They can run parts of a section and guide juniors, and the next step is usually Demi Chef de Partie or CDP. See Commis I jobs.

The exact titles can change from one employer to another, so always read the job description carefully.

Skills hotels look for in a commis chef

  • Knife skills and basic cooking. Clean, even cuts and the ability to follow a recipe.

  • Hygiene and food safety. Personal hygiene, clean storage and avoiding cross-contamination.

  • Speed under pressure. Staying calm when orders come in fast.

  • Teamwork and discipline. Listening to the CDP and supporting the rest of the brigade.

  • Willingness to learn. Asking questions and practising new dishes.

  • Cuisine knowledge. Indian, tandoor, Chinese, continental, bakery or pastry skills can help you stand out for a specific section.

A short cookery course, industrial training or previous work in a restaurant or cloud kitchen is worth adding to your profile.

Commis chef jobs in India

Commis chefs are needed in hotels and resorts, standalone restaurants, cafes and bakeries, banquet and catering kitchens, quick service restaurants and cloud kitchens. Big cities and tourist destinations usually have the most openings, but good jobs appear in smaller cities too.

You can browse all kitchen openings on the food production jobs page. If you are just starting, kitchen stewarding jobs are another way to get into a professional kitchen.

Commis chef jobs in the Gulf

Many Indian chefs build international careers in the Gulf, where hotels, resorts and restaurant groups hire kitchen staff from India. Experience in Indian cuisine, tandoor or continental cooking is often useful there.

You can see current openings by country:

Before you accept any overseas offer:

  1. Get a written offer letter and a proper employment contract, and read it fully.

  3. If your passport is ECR (Emigration Check Required), you will need emigration clearance through the Government of India's eMigrate system before you travel to the Gulf countries.
